How We Cook Our Biryani

Four steps. Zero shortcuts. Pure dum.

  1. 01

    Marinate Overnight

Meat rests in hung curd, raw papaya and our 18-spice masala for a full night.

  2. 02

    Layer The Basmati

Aged basmati rice, layered with saffron milk, mint and fried onions.

  3. 03

    Seal & Dum

The pot is sealed with wheat dough and slow-cooked on a low flame for 45 minutes.

  4. 04

    Serve With Pride

Lifted tableside with a flourish — the seal cracked, steam and aroma released.
